I made Paleo energy bars and they turned out pretty good. I’ve found many differing recipes for them, but customized to my liking. Give them a try and let me know if you like it and how you customize them.
Paleo Energy Bars
- 1/2 C of raw Almonds
- 1/2 C of raw Pecans
- 1/8 C of Sesame Seeds
- 1 C of Dried Cranberries
- 4 Tbsp of Organic Unsweetened Coconut Flakes
- 1 C of Dried Figs (make sure to remove the stem)
Put all ingredients in a food processor or blender and pulse a few times. Mix and pulse a few more times. It will start to bind. Don’t try to run it too long, you’ll burn out your motor on your appliance. Spoon out onto a cookie sheet or glass pan and shape to a rectangle. Put in the refrigerator for an hour, then cut up into bar sized pieces and wrap in plastic for a healthy, easy, nutritious snack.
NOTE: after I made these I found out I have a sensitivity to Almonds. So no more tree nuts for me. But I wanted to share this recipe because I thought it was so delicious. Enjoy!
